Summer Project 1: Make Lola Vegan

Before beginning the project, I want to explain a few things.
Why The Decision?
(1) Everything I've read has insisted making cats vegan is a big mistake. Fortunately Lola is a dog, and everything I've read insists dogs will do it, if you make them. More to my luck, as one vet put it a dog will pick a steak over corn, mine picked peanut butter over liver, repeatedly.
(2) I have a lot of reasons for not eating meat and its by-products. Many of them revolve around the environment and not putting crap in my body. I see no logical reasons not to apply this to Lola's food especially considering making her whole, unprocessed meat based dog food does not support her health for the same reasons they don't support mine. If we ever fix the system, I will gladly consider introducing meat back into her diet.
(3) Lola likes my food better anyway and my diet brings us joy.
(4) I want to wean her off processed foods. I want my dog to have a wholesome diet that encourages life.
(5) She's already lactose intolerant.
(6) I want to invest more in my dog all the time!

 What to do Before I begin the transition: 
(1) Read information on dog nutrition
(2) Get a bunch of recipes
(3) Begin building a repertoire of easy foods
